The restaurant is named after Hans Waldmann, who owned nearby Dübelstein Castle from 1487 to 1489.
- 1932The restaurant was built; later renovations brought it to its current size and style.
- 2011Fabian Aegerter began working at the restaurant.
- 2016The Aegerter family celebrated 30 years of running the restaurant.
- January 2017The senior owners handed the restaurant to the next generation. Fabian Aegerter took overall management after training in Switzerland and abroad.
- 2019Fabian Aegerter received the «Zukunftsträger 2019» title in the restaurant service category.
