Before opening Chambar, Nico became head chef at Alhambra in Sydney, where he met Karri Schuermans.
- 2004Nico and Karri Schuermans opened Chambar. Tia Kambas joined the team as a dishwasher.
- 2014Tia returned as Executive Chef, focusing on back-end operations.
- 2015Bar manager Brendan Wooldridge joined the bar team in the expanded space.
- 2017Brendan took charge of the bar team.
- 2018Mickael Kean joined as a polisher while learning English, then worked through the kitchen stations.
