History
The founders converted a rented warehouse using rusted iron sheets welded to steel beams.
- 1988After a late-night meal, Carlos Anderson sketched a mining-town building on a bar napkin. Billy moved from Puerto Vallarta to Baja California Sur to help start the venue.
- 1989El Squid Roe opened as a Mexican company and became a downtown Cabo San Lucas landmark.

- Come during the day for the restaurant atmosphere; the nightclub atmosphere takes over in the evening.

- The daytime patio welcomes families for meals and drinks. After 22:00, entry is restricted to guests aged 18 and over.
