History
Martha Gneupel helped pioneer vegetarian cuisine and led the restaurant alongside Ambrosius Hiltl. Hiltl Akademie is another venue under the same roof.
- 1898Founded as a vegetarian restaurant.
- 1950sMargrith Hiltl brought spices back from Delhi and began cooking Indian dishes in her private kitchen on the building’s second floor.
- 1990sThe restaurant began serving alcohol.
- 1998Rolf Hiltl took over as the fourth generation of the family business. The first cookbook developed at the Hiltl Akademie appeared that year.
- 2009Hiltl-created vegetarian and vegan meals began being served on SWISS flights.
