History
Formerly known as La Côte d’Or, the establishment became a headquarters for food critic Curnonsky. Jean-Baptiste Monin's ham with cream gained fame at a 1921 banquet for Raymond Poincaré and won an award in Paris in 1924.
- 1873The former coaching inn became a hotel after coaching inns were discontinued.
- 1932Chef Alexandre Dumaine acquired the Hostellerie de la Côte d’Or.
- 1935Under Dumaine, the restaurant earned its third Michelin star.
- 1975Claude Verger bought the restaurant and appointed Bernard Loiseau chef de cuisine; Loiseau also managed the hotel.
- 1982Bernard Loiseau bought the establishment.

- 2003After Bernard Loiseau's death in February, Dominique Loiseau and Patrick Bertron shared the succession; the establishment was renamed in his memory in June.
