History
Before the restaurant opened, the owners tested their food at five food festivals. Peter visited a different region each month to meet farmers and cheese makers.
- March 2010Opened as a 180-cover restaurant and the UK's largest Spanish deli, set up by Peter and Elaine Kinsella.
- October 2017Moved two doors down to a new site in Liverpool One; it is one of two Liverpool locations.
- October 2024Became employee owned through an Employee Owned Trust set up by its founders, so the staff have a stake in the business.
