History
- 1978A festival in Echallens renewed interest in bread and efforts to preserve wood-fired ovens and baking traditions.
- 1980An initial proposal for a bread museum stalled for lack of support.
- 1981The project took shape with backing from the syndic and festival committee. Festival funds helped acquire the Panchaud farm.
- 27 April 1982The founding assembly met after the Panchaud farm, dating from 1790, had been acquired.
- May 1988The museum opened after renovation and exhibition design work. The building also began housing the Maison du costume vaudois.

- 16 April 1989At the official inauguration, farming delegations from all 26 cantons symbolically delivered grain.
