History

Bettie and James settled in Central Texas and raised nine children in Driftwood. Before opening the restaurant, the family truck-farmed, made candies, grew pecan trees and shelled pecans. Thurman began tending the pit on Thursday nights and stayed through the weekend, sleeping on a cot until the meat sold out. After a few months of success, the family built a small screen porch around the pit.
