Before opening the trattoria, Giorgia Losi worked in communications in Milan.
- 2015Giorgia Losi founded Trattoria dell'Acciughetta in February.
- 2017Simone Vesuviano, an assistant cook on the original team, became a partner.
- 2019Chef Matteo Rebora joined the partnership in November after five years at the trattoria.
